Is it possible to change what client i'm using via HxD?

Client name.

I mean, it probably is possible, you'll just have to go hunting for it. I'll post an update if I find out anything.

yes, you dont even need hxd just open it up in notepad++ and replace all instances of "ClassiCube 1.2.0" (or any version you're on) with whatever you want
