Linux Mint with XFCE is my daily driver. XFCE is very lightweight compared to Cinnamon and GNOME and I like its customizability a lot more than Cinnamon or GNOME. I even have a theme that makes my entire system look and even feel like Windows 95, its really good.
I also have a shit ton of respect for Debian and used it as a daily driver for months after using Linux Mint before eventually switching back to Linux Mint for the convenience.
Ubuntu is almost fine outside of the fact that it's run by a for-profit company (Canonical) so I stay as far the fuck away from it as I possibly can. Linux Mint is basically Ubuntu but without all of Canonical's bullshit.
If you held me at gunpoint and forced me to use Windows, I would pick Windows 7 with all the service packs because it still supports some software. It's really unfortunate that Steam isn't supported on Windows 7 anymore though (if literally anything supported Windows XP anymore, I would pick that instead)
